Mojito Iced Coffee
A refreshing, tropical twist on your morning caffeine kick.
Add a vacation-like vibe to your routine with this mojito-inspired coffee. Keep it as-is for a zesty daily treat, or "kick it up" with a shot of dark rum for a weekend brunch cocktail.
Ingredients
10 large fresh mint leaves (plus extra for garnish)
Zest of 1 lime
1 tbsp turbinado sugar
1½ cups cold brew coffee (homemade or store-bought)
Ice
1½ oz dark rum (optional)
Cream (optional)
Preparation
Muddle the Base: Combine the mint leaves, lime zest, and turbinado sugar in the bottom of a large cocktail shaker. Use a muddler (or the handle of a wooden spoon) to mash them together until the mint is fragrant and the sugar begins to pull the oils from the zest.
Chill and Shake: Fill the shaker with ice and pour in the cold brew. Close the lid tightly and shake vigorously for about 20 seconds, or until the outside of the shaker feels icy and looks frosted.
Strain and Pour: Strain the mixture into a tall glass filled with fresh ice.
Personalize: * Keep it bold: Serve it black.
Make it creamy: Stir in a splash of cream.
Make it a cocktail: Stir in the dark rum.
Garnish: Top with a fresh sprig of mint and serve immediately.
Pro Tips
The Sugar: Turbinado sugar is great because its molasses notes pair beautifully with coffee, but it can be crunchy. If you prefer a smoother texture, you can swap it for 1/2 oz of simple syrup.
The Zest: Avoid the white "pith" of the lime when zesting; you only want the green outer layer to avoid any bitterness.
Here are some lighter tapas and snacks that mirror the bright, airy profile of the Mojito Iced Coffee:
Fresh & Crunchy (Vegetable-Based)
Cucumber & Mint Gazpacho Shooters: A chilled, blended soup made with cucumber, a hint of yogurt, and fresh mint. It’s incredibly hydrating and echoes the herbs in your coffee.
Jicama Sticks with Tajín: This crunchy, water-rich root vegetable is the ultimate light snack. Squeeze some extra lime over them and sprinkle with chili-lime salt (Tajín) for a zingy contrast.
Radishes with Sea Salt: A classic French-style snack. Crisp, peppery radishes dipped in a tiny bit of high-quality butter and flaky sea salt provide a clean, sharp palate cleanser between sips of coffee.
Zesty & Bright (Seafood & Fruit)
White Fish Ceviche: Tiny cubes of white fish "cooked" in lime juice with red onion and cilantro. The acidity of the lime in the ceviche is a direct match for the lime zest in your drink.
Watermelon & Feta Cubes: The sweetness of the watermelon and the saltiness of the feta create a perfect balance. Add a small mint leaf on top of each cube to bridge the flavors together.
Shrimp & Pineapple Skewers: Quickly grilled or chilled shrimp paired with fresh pineapple chunks. It feels tropical and sophisticated without being filling.
Simple Garden Bites
Caprese Skewers: Cherry tomatoes, small mozzarella pearls, and fresh basil leaves drizzled with a light balsamic glaze. It’s fresh, colorful, and very light on the stomach.
Compressed Melon: If you have a vacuum sealer (or just let it macerate in the fridge), melon slices infused with a little bit of lime juice and a dash of ginger are incredibly refreshing.
